Fresh Pineapple
peeled and cubed. Sub canned pineapple in juice drained

Watermelon
peeled and cubed

Red Onion
minced

Jalapeños
sliced thinly

bunch
Cilantro
tough stems removed and roughly chopped

Olive Oil

Lime(s)
zested and juiced (3 Tbsp)

Apple Cider Vinegar

Kosher Salt and Pepper
to taste
Instructions
In a small bowl, whisk together
oil, apple cider vinegar, lime juice, lime zest, agave, salt and pepper.
In large bowl, combine
pineapple, watermelon, cilantro
and
red onion.
Toss with
dressing
and serve immediately.
Notes
If needed, all ingredients can be prepped ahead of time and refrigerated separately. Once dressed, consume immediately for best results.
