Best Lemon Almond Ricotta Cake Recipe

Featuring a dense, almond-flecked lemon pound cake base, toffeed almond topping, and a gorgeously light n’ lemony sweet ricotta whipped cream, my Italian Lemon Cake recipe is one for the books!

Ingredients: Flour Sugar Lemons Baking Powder Salt Eggs Ricotta Vanilla Extract Almond Extract Lemon Extract Butter

Rub lemon zest into sugar, using your fingers.

Whisk together flour, lemon sugar, baking powder, and salt.

Whisk together eggs, ricotta, vanilla extract, lemon extract, and almond extract.

Combine wet and dry ingredients until combined.

Fold in melted butter until combined.

Make Italian Almond Cake Topping.

Assemble cake.

Bake cake until golden brown.

Blitz the sugar until superfine.

Add ricotta, lemon zest, juice, vanilla extract, and sugar to food processor. Whip together.

Serve cake warm with a dollop of sweetened ricotta.
