How to Make Low-Sodium Vegetable Broth

Why not use scraps that would otherwise be destined for the compost heap to make your own Low-Sodium Vegetable Broth & Healing Bone Broth for FREE??

Broth and stock are integral for making soups, stews, sauces, and more. But, rather than spend money on buying it in a can or a box (or using whole food ingredients that could be better used to feed your family), why not make your own!

Ingredients: – Vegetable Scraps – Water – Optional Seasoning & Flavor Boosters

Step 1: If you have the time, I recommend roasting your scraps on a parchment-lined sheet pan to concentrate their flavors. Roast them in a 400F preheated oven for 20-30 minutes.

Step 2: Cover the frozen or roasted scraps with 2-3 inches of water. This should be somewhere in the ballpark of a gallon. Add a few flavor boosters like peppercorns, a bay leaf, and any herb scraps. Place the lid on the crockpot insert.

Step 3: Cook the stock for 8-10 hours on low or 4-5 hours on high. Skim & Strain the broth to remove excess fat and solids. Season to taste with kosher salt (optional).

Step 4: Use or Store. Your crock pot low sodium  vegetable broth is now ready to use!
