What could be better than waking up to a bowl of sunshiny fruit staring up at you from a pillow of dreamy coconut cream yogurt? If you have your homemade fancy coffee in hand, nothing. I assure you. This delightfully pretty and super healthy breakfast parfait came together in 3 minutes flat. It was, as the French say, parfait!

Fresh cut fruit, grain free granola and creamy yogurt collide to make a beautiful & healthy breakfast parfait in minutes.
I was seriously so tickled to eat this.

How to make this breakfast parfait

I started off with a cup of my favorite yogurt on the market, TJ's Whole Milk Greek Yogurt Coconut Cream and topped it with perfectly ripe fruit: an Ataulfo mango and nectarine. Then I busted out my newest favorite Costco find, Simply Pecan's Grain Free Granola. Finally, I sprinkled just a wee bit of unsweetened coconut on top to tie it all together. It. Was. Glorious.

I should tell you, I'm not usually great at either a.) mornings, or b.) eating breakfast. I know, I know. It's the most important meal of the day and all that. I am working hard to metamorph into one of those chipper morning people who do sun salutations and gratitude journals and watch the sunrise. You know? One of THOSE people. I've always wanted to be one. I'm pre-verbal before my first cup of coffee. But people can change, right??

Anyway, this parfait set me off to a great start. It was bright and light, easy to digest and so full of flavor. I've been in an awesome mood all day, and I partially attribute that to starting off with such a happy, healthy breakfast.

It's a gee dang bowl of sunshine. How can you be anything but pumped when you wake up to that?

And what's not to love? Creamy coconut-y yogurt packed with protein and probiotics. Sweet tropical mango and juicy summery nectarines bursting with vitamins and nutrients. Crunchy salty-sweet granola. Perfect coconut flakes for texture. It's grain and gluten free. And you could totally prep it in advance in little mason jars. (Have you seen this hack? It's BRILLIANT!) This breakfast parfait checks every box!!

I highly recommend you treat yourself to a bag of Purely Pecan's Grain Free Granola, some fresh fruit (of your choice) and yogurt. It'll change you. I'm pretty sure it's making me a better person. Today, at least. Wish me luck tomorrow. Maybe I'll just prep one of these to give me a fighting chance...

Ingredients
  

  • 8 oz Yogurt of Choice dairy free for Paleo
  • 1 C Chopped Fruit of Choice mango, peach, nectarine, banana, apple, pear, etc.
  • ⅓ C Purely Pecan's Grain Free Granola
  • 1 tablespoon Unsweetened Coconut Flakes

Instructions
 

  • Layer yogurt and cut fruit.
    Add granola and coconut. If making ahead, keep granola separate until eating time for optimal crunch.
  • ENJOY YOUR MORNING!
