I'm a sucker for almost every kind of roasted vegetable, but the sweet and nutty duo of roasted carrots and cauliflower hold a special place in my heart. Paired with spicy harissa paste, tangy feta, syrupy pomegranate molasses and crunchy pistachios? I'm officially weak in the knees. Honestly friends, these just might be my favorite vegetables of all time!

This easy recipe proves that roasted vegetables never have to be boring. The carrots and cauliflower turn tender and caramelized in the oven, soaking up all that smoky, spicy harissa flavor, while the toppings take things from "perfect side dish" to "can't-stop-eating-this" territory with the perfect balance of textures and flavors.

Best of all, this flavorful side dish is as flexible as it is delicious—serve it as a show-stopping side next to dutch-oven turkey breast or smoked leg of lamb, or pile it on top of a bed of couscous or grains for a hearty dish that happens to be vegetarian.   • Feta Crumbles - Look for a block of feta and crumble it yourself for the best flavor and texture (pre-crumbled feta tends to be drier). If you don't have feta, goat cheese makes a great tangy swap in the whipped mixture.
  • Cream Cheese - Softening is key here so it blends smoothly with the feta instead of leaving lumps. Full-fat cream cheese gives the richest texture, but slightly lighter Neufchatel cheese will work in a pinch.
  • Heavy Cream - This helps thin out the whipped feta to your desired consistency. Start with a little and add more until it's smooth and spreadable. Half-and-half or whole milk can be used as a lighter substitute.
  • Fresh Lemon Juice - Freshly squeezed is best for bright, fresh flavor. To get the most juice from your fruit, roll it firmly on the cutting board for about 15 seconds before cutting it open.
  • Carrots - Regular carrots work great, but rainbow carrots make this dish extra beautiful if you want to impress. 
  • Cauliflower - Cut into evenly-sized florets so everything roasts at the same rate. Romanesco is a fun substitute if you want a slightly nuttier flavor and striking visual.
  • Olive Oil - Extra virgin olive oil adds the best flavor, but any neutral high-heat oil like avocado oil will work for roasting.
  • Harissa Paste - This North African chile paste brings smoky heat—look for it near the international foods or specialty condiments. Mild harissa keeps things approachable, while hot harissa turns up the spice. In a pinch, sub in a mix of smoked paprika, cayenne or red pepper flakes, and a touch of tomato paste.
  • Pistachios - Roasted and salted pistachios add the best crunch and flavor contrast. Pine nuts, slivered almonds, or walnuts also work well if pistachios aren't available.
  • Pomegranate Molasses - This sweet-tart syrup is the secret ingredient that ties everything together. You can typically find it at Middle Eastern grocers or online. If you can't find it, it’s easy to make your own by reducing pomegranate juice, lemon juice and sugar until thick and syrupy.
  • Sea Salt & Black Pepper - Simple seasonings to round everything out!

How to Make Roasted Carrots and Cauliflower

Before you get started, remember to preheat the oven to 450ºF and line a half sheet pan with parchment paper.

Step 1: Whip up the feta. Add the feta and softened cream cheese to the bowl of your food processor and mix until combined. Pour in the heavy cream and lemon juice, then process until everything's smooth and luxuriously creamy. Give it a taste and season with kosher salt and pepper until it's just right.

Step 2: Chill it out. Transfer the whipped feta to an airtight container and pop it in the fridge for at least an hour so it can firm up. Good news if you're planning ahead—this can be made up to a week in advance.

Step 3: Prep your veggies. Wash your head of cauliflower and carrots, peeling them if you'd like (I skipped this step, but it's totally your call). Slice the carrots into matchsticks roughly 1 centimeter square and about 4 inches long—this helps them roast evenly and gives the dish an elegant look. Break the cauliflower into bite-size pieces.

Step 4: Season and roast. Toss the carrot matchsticks and cauliflower florets with olive oil, harissa paste, kosher salt, and black pepper. Spread them in a single layer on the prepared baking sheet, then roast in the preheated oven at 450°F for about 10 minutes.

Step 5: Flip and finish roasting. Pull the tray out and flip the veggies with a spatula. Slide it back in the oven for another 10 minutes or so, until everything is charred at the edges and fork-tender.

Step 6: Plate. I love serving this family-style on a big platter so everyone can dig in together, but you can easily follow the same assembly steps for individual plates instead. Spread a generous layer of whipped feta on the bottom of your serving vessel—don't be shy, it's the best part! If you're using a platter, go for a big, pillowy cloud of it as your base.

Step 7: Layer, garnish, and serve. Pile on the roasted carrots and cauliflower, tossing them together first so the colors are nicely mixed throughout. Finish with a sprinkle of chopped pistachios and a drizzle of pomegranate molasses. Voilà—you've got a great side dish or vegetarian main ready to devour!

Optional Variations & Dietary Adaptations

  • Vegan - Swap the feta and cream cheese for your favorite dairy-free alternatives, and use a plant-based cream (like coconut cream or cashew cream) in place of the heavy cream. 
  • Adjust the heat - Use mild harissa for a more subtle warmth, or go with hot harissa (or add a pinch of cayenne) if you like things spicy. Alternatively, swap in about a tablespoon of sumac powder for a riff on my sumac-roasted carrots and parsnips. 
  • Nut-free - Skip the pistachios or swap them for toasted pepitas (pumpkin seeds) or sunflower seeds for that same satisfying crunch.
  • Make it a full meal - Serve this over a bed of couscous, quinoa, or farro, and add a scoop of chickpeas for extra protein to turn this side into a hearty vegetarian main for Meatless Mondays.

Expert Tips 

  • Don't skip the room-temperature cream cheese. Cold cream cheese straight from the fridge won't blend smoothly, even in a food processor—you'll end up with little lumps instead of a silky whip. Give it 30-60 minutes on the counter before you start.
  • Add the cream gradually. Pour in the heavy cream a little at a time while the processor is running rather than all at once. This gives you full control over the final texture. You want it light and spreadable, not runny.
  • Cut your matchsticks evenly. Uniform sizing is the secret to perfectly roasted vegetables—if some pieces are thicker than others, you'll end up with a mix of mushy and undercooked bites. Take the extra minute to cut them consistently.
  • Don't crowd the pan. Spreading the vegetables in a single layer with a little breathing room between pieces ensures they roast and char instead of steam. If needed, use two trays rather than piling everything onto one.
  • Let your oven fully preheat. Starting with a properly heated 450°F oven is what gives you beautifully charred edges.
  • Taste as you go. Whipped feta's saltiness can vary a lot depending on the brand, so always taste before adding extra salt—you may need less than you think.
  • Warm your serving vessel (optional, but nice). If you're going for a family-style platter presentation, a slightly warm plate helps keep the dish inviting longer, especially if you're not serving right away.
  • Make extra whipped feta. It keeps well for up to a week in the fridge, so consider doubling the batch. It's fantastic as a dip, a sandwich spread, or a dollop over other roasted veggies throughout the week.

This roasted carrots and cauliflower platter is wonderfully versatile, making it just as at home on a weeknight dinner table as it is on a holiday spread. 

Serve it alongside crispy thin chicken breasts for a well-rounded meal, or let it shine as part of a larger mezze-style spread with hummus and warm pita or sourdough sandwich bread for scooping. It also pairs beautifully with heartier mains like my harissa ribeye steak, where the bright, tangy feta and charred vegetables help cut through rich meat.

If you're hosting a gathering, this delicious side dish makes a great addition to a larger spread. Try pairing it with creamy potato and roasted fennel gratin and fall kale salad with crispy chickpeas for a colorful, crowd-pleasing table. For a lighter lunch, pile the whipped feta and roasted vegetables over a bed of greens or alongside a cup of spicy butternut squash soup for a cozy combination. 

And if you happen to have leftover whipped feta, don't let it go to waste—it's equally delicious as an omelet filling the next morning or added to a grilled chicken pita wrap or a Greek burger for an easy, flavor-packed lunch.

  • Reheating the vegetables: For the best texture, reheat the roasted vegetables in a 400°F oven for about 8-10 minutes, or until warmed through and re-crisped at the edges. You can also use an air fryer at 375°F for 4-5 minutes. Microwaving works in a pinch, but the vegetables will lose their char and turn a bit softer.
  • The whipped feta: This is best served cold or at room temperature, so there's no need to reheat it. Just pull it from the fridge about 15-20 minutes before serving so it has time to soften slightly and become easier to spread.

FAQs

What is the secret to perfectly roasted carrots?

The secret is high heat and even spacing. Roasting at 450°F allows the natural sugars in the carrots to caramelize quickly, giving you that deep golden color and slightly crisp edge while keeping the inside tender. Cutting the carrots into uniform matchsticks or sticks also ensures they all cook at the same rate. Finally, don't overcrowd the pan; giving the carrots some breathing room lets moisture escape so they roast and char instead of steam.

Do I have to parboil the cauliflower before roasting?

No, parboiling isn't necessary for this recipe. Roasting cauliflower straight from raw at a high temperature gives it plenty of time to become tender on the inside while developing crispy, caramelized edges on the outside. Parboiling can actually work against you here, since it adds extra moisture that makes it harder for the cauliflower to crisp up properly in the oven.

What is harissa? Is it good on roasted cauliflower and carrots?

Harissa is a North African chili paste made from roasted red peppers, warming spices like cumin and coriander, garlic, and olive oil, giving it a smoky, earthy heat. It's absolutely wonderful on roasted cauliflower and carrots! The deep, complex spice of the harissa plays beautifully against the natural sweetness of the caramelized vegetables, and it also adds a gorgeous reddish color to the dish. You can use mild harissa for subtle warmth or a hotter variety if you want more kick.

Whipped Feta

  • 8 oz Feta Crumbles
  • 4 oz Cream Cheese softened to room temperature
  • 3-4 tablespoon Heavy Cream as needed
  • 1-2 tablespoon Lemon Juice
  • Kosher Salt & Black Pepper to taste

Roasted Carrots and Cauliflower

  • 1 lb Carrots
  • 1 lb Cauliflower
  • 3 tablespoon Olive Oil
  • 1-2 tablespoon Harissa Paste depending on how spicy you prefer it
  • Kosher Salt & Black Pepper to taste

For Assembly

  • ¼ C Pistachios roasted & chopped
  • 3 tablespoon Pomegranate Molasses

Instructions
 

  • Add the feta and the softened cream cheese to the bowl of the processor. Mix until combined.
    8 oz Feta Crumbles, 4 oz Cream Cheese
  • Add the heavy cream and lemon juice and process until smooth and creamy. Taste and add kosher salt and pepper as needed. Put into an airtight container and place in the refrigerator for at least an hour to firm up.
    3-4 Tbsp Heavy Cream , 1-2 Tbsp Lemon Juice, Kosher Salt & Black Pepper
  • Next, slice carrots into matchsticks that are roughly 1 centimeter square and roughly 4 inches long. Break cauliflower into bite-sized florets. Toss the veggies with olive oil, harissa, kosher salt and pepper.
    1 lb Carrots, 1 lb Cauliflower, 3 Tbsp Olive Oil, 1-2 Tbsp Harissa Paste, Kosher Salt & Black Pepper
  • Spread the vegetables in a single layer on a parchment or Silpat lined baking tray and roast at 450F for about 10 minutes. Remove from the oven and flip the matchsticks & florets with a spatula. Return to the oven for another 10 or so minutes, until charred on the edges and fork tender.
  • Generously swipe the whipped feta on the bottom of your serving vessel.
    Top with roasted carrot and parsnip matchsticks that you've tossed together for well-integrated color.
    Sprinkle with chopped pistachios and drizzle with pomegranate molasses. Enjoy!
