All you need is a sheet pan, 9 simple ingredients and about 10 minutes of active prep to get these bad boys in the oven, then the oven takes care of the rest. 30 minutes later, you’ll be rewarded with crisp-on-the-outside, fluffy-on-the-inside spuds that are perfect for serving alongside all your breakfast favorites!

What I love most about making oven baked home fries is that it completely skips the babysitting. No standing over a skillet, flipping potatoes every few minutes and praying they don't stick or burn.   • Potatoes - Russet or Yukon Gold both work great here! Russets give you a fluffier interior, while Yukon Golds are a little creamier. No need to peel them! I personally love the extra texture and nutrients the skin adds, but feel free to peel if that's more your style. Sweet potatoes also make a fun swap!
  • Bell Pepper - Any color works, so grab whichever looks best at the store! Red, orange, and yellow tend to be a bit sweeter than green, which pairs nicely with the smokiness of the poblano.
  • Poblano Pepper - This mild pepper adds a subtle smoky depth without much heat. If you can't find one, a green bell pepper is a great substitute (though you'll lose a little of smoky flavor).
  • Yellow Onion - Adds a savory, slightly sweet flavor once roasted. A white onion or even a red onion will work in a pinch.
  • Avocado Oil - This is my go-to for high-heat roasting since it has a neutral flavor and a high smoke point. Feel free to swap in another neutral oil, like grapeseed or vegetable oil. Skip olive oil, which can burn at high heat.
  • Garlic Powder - Adds savory depth without the risk of burning like fresh garlic can at high oven temps. Feel free to swap in sweeter onion powder.
  • Paprika - Brings a subtle warmth and beautiful color. If you want a little kick, swap in smoked paprika or a pinch of cayenne.
  • Kosher Salt - Don't be shy here! Potatoes need a generous hand (about a teaspoon of salt) to really bring out their flavor. If you swap in fine sea salt, use a bit less to start since it's more concentrated.
  • Black Pepper - Freshly cracked is best for the boldest flavor, particularly if it’s quite coarse.

How to Make Baked Home Fries

Step 1: Preheat your oven and prep your pan. Crank the oven to 450ºF and set your rack to the middle position. Line a large baking sheet with foil rather than parchment paper—this makes cleanup a breeze and helps ensure maximum crispiness. (Doubling the recipe? Set your racks to the top ⅓ and bottom ⅓ of the oven, and be sure to rotate the pans halfway through when you toss everything.)

Step 2: Toss everything together in a mixing bowl. Give all the ingredients a quick stir until everything's evenly coated. Spread it all out in a single layer on the prepared baking sheet. Don't overcrowd the pan, or you'll end up steaming instead of roasting!

Step 3: Roast until golden and crispy. Pop the pan in the oven for about 30-35 minutes, giving everything a toss once or twice along the way so it browns evenly. You'll know it's ready when the edges are golden brown and delightfully crisp. (Got a convection oven? Lucky you! Just cut the cook time down to about 25-30 minutes.)

Step 4: Taste, season, and dig in! Give everything a final taste and add a little extra salt and pepper if needed. Serve piping hot, straight from the oven. My personal favorite way to enjoy these? A drizzle of ketchup or sriracha and a runny fried egg on top!

  • Make it Spicy - Add a pinch of cayenne pepper or red pepper flakes to the seasoning mix, or swap in a jalapeño for extra heat alongside (or instead of) the poblano.
  • Add Some Protein - Toss in some cooked breakfast sausage or diced ham during the last 10 minutes of roasting for a heartier, one-pan meal.
  • Make it Cheesy - Sprinkle shredded cheddar or pepper jack over the top during the last 5 minutes of cooking and let it melt into gooey, golden perfection.
  • Swap the Veggies - Not a fan of poblano? Try other colors of bell peppers, sliced mushrooms, or even diced sweet potato in its place. This recipe is endlessly adaptable to whatever you've got in the fridge.
  • Low-FODMAP - Skip the onion and swap the garlic powder for a pinch or two of asafoetida (hing).
  • Air-Fried - Short on time or don't want to heat up the whole oven? The air fryer's got you covered! Toss your potatoes, peppers, onion, oil, and seasonings together just like normal, then load everything into your air fryer basket in as close to a single layer as you can manage (work in batches if needed—overcrowding will leave you with steamed potatoes instead of crispy ones). Air fry at 400ºF for about 15-20 minutes, giving the basket a good shake every 5-7 minutes so everything cooks evenly. You'll know they're done when they're golden brown and crispy on the outside and fork-tender in the middle.

  • Don't skip making one single even layer. Overcrowding the pan is the number one culprit behind soggy homemade home fries instead of crispy ones. If your pan feels crowded, split things between two sheet pans rather than piling everything on one.
  • Cut your veggies evenly. Try to keep your potato cubes and pepper/onion dice close in size so everything cooks at the same rate. I like to cube the peppers and onions about 50% bigger than the potatoes since they cook faster and shrink more.
  • Let them sit before tossing. Resist the urge to stir too early! Give the potatoes a solid 10-15 minutes on the pan before the first toss so they have time to develop a golden crust.
  • Dry your potatoes well. If you rinsed your potatoes after cubing them, pat them completely dry before tossing with oil. Excess moisture is the enemy of crispiness.
  • Use a metal pan, not glass. Metal sheet pans conduct heat better and give you that deep golden-brown color glass pans just can't replicate.
  • Season in stages. Season once before roasting, then taste and adjust right when they come out of the oven. Salt tends to taste saltier on hot, fresh potatoes, so you may need less than you think at the end.
  • Make extra. These reheat beautifully in a skillet or air fryer the next day (though let's be honest, they rarely make it that long).

These crispy home fries are endlessly versatile. Here are a few of my favorite ways to serve them up:

  • Turn them into poutine - Pile these potatoes high and smother them in cheese curds and my easy mushroom gravy for a flavorful twist on my poutine with sheet pan potato wedges.
  • As a dinner side dish - Serving a big holiday spread? Swap the usual greek yogurt mashed potatoes for these crispy home fries alongside my tandoori roasted turkey breast for a flavor-packed alternative.
  • Take a shortcut to taco night - Craving my chorizo potato tacos but short on time? Just brown up some Mexican sausage and toss it right in with these potatoes for an easy, delicious shortcut.
  • Top with eggs - Fry, scramble, or poach a couple of eggs and set them right on top of these potatoes for an easy, satisfying breakfast. A runny yolk basically doubles as a sauce.
  • Load them up - Top with black bean chicken chili, shredded cheese, diced tomatoes, jalapeños, sour cream, and a drizzle of hot sauce for loaded potato "nachos" that're basically chili cheese fries!

    • Stovetop: Heat a splash of oil in a skillet over medium-high heat and toss the potatoes around for 5-7 minutes until they're crispy and heated through.
  • Freezing: Homemade home fries are best enjoyed fresh, but if you want to freeze them, cool completely and store in a freezer-safe bag or container for up to 2 months. No need to thaw frozen home fries first, just add a few extra minutes to the baking time.

What are the best potatoes for home fries?

Yukon gold potatoes and russets are your best bets. Yukon golds hold their shape well and get creamy inside with a golden, crispy exterior; russets are starchier and give you an extra-crispy crust, though they can fall apart a bit more easily. Either works great! Just avoid waxy potatoes like red potatoes, which won't get as crispy.

Are home fries healthy?

Home fries can fit into a healthy diet in moderation.   • 2.5 pounds Potatoes Yukon Gold or Russet, peeling optional
  • 1 Red Bell Pepper or orange, yellow
  • 1 Poblano Pepper
  • 1 Yellow Onion or red
  • ¼ C Avocado Oil or canola
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher Salt plus more to taste
  • 1 teaspoon Black Pepper freshly cracked

Instructions
 

  • Preheat oven to 450ºF and set the rack to the middle of the oven. (If doubling the recipe, racks should be at top ⅓ and bottom ⅓, then rotate the pans halfway through when you toss them.) Line a baking sheet with foil for easy cleanup and good browning. 
  • Prep veggies. Cut the potatoes into ¾-inch cubes, and the peppers and onion into roughly 1-inch dice.
